EASY CHICKEN, RICE, AND VEGETABLES RECIPE FOR COLLEGE STUDENTS!
In College, we don’t always have the most time to be able to create full course meals, or even have time for foods to marinate or be pre seasoned. Today, I will show you guys the guide to an easy to make Chicken, Rice, and Steamed Vegetables.
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 cup of long-grain white rice
- 2 cups of water
- 1 tablespoon of olive oil
- Seasoning of your choosing
- Your favorite veggies (I like steamed vegetables from Walmart, or any grocery store.)
Instructions:
- Prep the Chicken:
- Start by giving those chicken breasts a rinse and pat them dry with paper towels. Season them with any seasoning. Nothing fancy, just enough to give them some flavor.
- Cook the Rice:
- Rinse the rice under cold water until the water runs clear. This gets rid of excess starch and helps prevent clumpy rice.
- Heat a saucepan over medium-high heat and add the olive oil. Toss in the rice and give it a good stir. Let it cook for a minute or two, just until it’s lightly toasted and fragrant.
- Pour in the 2 cups of water, bring it to a boil, and then reduce the heat to low. Cover and let it simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed. Fluff it up with a fork when it’s done.
- Steam the Vegetables:
- While the rice is doing its thing, prepare the veggies. For me, I use frozen veggies, so I just follow the instructions. Make sure to not overcook them!
- Cook the Chicken:
- In a separate skillet, heat a bit of olive oil over medium-high heat.
- Add the seasoned chicken breasts and cook for about 7-9 minutes on each side, or until they’re cooked through and have a nice golden color. The cooking time can vary depending on the thickness of the chicken, so use a meat thermometer to make sure it’s reached an internal temperature of 165°F.
- Serve:
- Slice the cooked chicken into thin strips or however you like your chicken cut.
- Plate up your chicken, rice, and steamed veggies however you like. I usually layer the rice, then the chicken strips, and finally top it off with those steamed vegetables.
- You can add a little sauce of your choosing, I usually use a chicken sauce I get from Costco (yes it’s called chicken sauce).
There you have it, a tasty homemade chicken rice and steamed veggie dish that’s as easy as it is delicious. Enjoy your meal! I usually meal-prep these meals. On Sunday I like to make a big batch of chicken, rice, and vegetables and put them into containers so all I have to do is heat up those containers for lunch or dinner, making more time to do other things instead of cooking throughout the week.
